This ginger lime salmon is a fresh, vibrant dish that brings together warm, aromatic ginger with the bright zing of lime. It’s light but full of flavor, with a balance of citrus and sweetness. Quick to prepare, nutritious, and delicious. It’s the ideal weeknight meal when you want something delicious without the fuss.

Ingredients
2 salmon fillets
2 cups rice (or 1 microwave rice packet)
2 limes
1 tbsp ginger
1 garlic clove
2 tbsp low sodium soy sauce
2 tbsp rice wine vinegar
1/2 cup chicken stock
2 cups broccoli (optional)
2 baby pak choi (can substitute spinach)
1 small bunch of spring onion

Preparation
Combine the lime juice, ginger, garlic, soy sauce, vinegar, and a pinch of black pepper in a bowl.
In a separate bowl, pour half the marinade over the salmon. Leave for 15-20 min.
Cook marinated salmon on preheated nonstick pan. 6 minutes each side until cooked through.
Heat separate pan with the rest of the marinade and stock. Add broccoli and cook for 5 minutes. Add pak choi and cook for 2 more minutes.
Serve salmon over rice and vegetables. Sprinkle spring onion (optional).
