Lemon Courgette Linguine

About the Recipe

A light, fresh, and flavor-packed pasta inspired by Jamie Oliver’s simple cooking style. Soft courgettes sautéed in olive oil, bright lemon, fresh mint, and a handful of parmesan come together to create an easy, comforting dish that feels both vibrant and soothing. Perfect for a quick weeknight dinner and full of effortless flavour.

Ingredients

  • 150g linguine (about half of a box)

  • 2 courgette

  • ½ bunch of fresh mint (about ½ cup)

  • ¼ cup grated parmesan

  • 1 lemon


Preparation

  1. Slice the courgette/zucchini into long matchsticks.

  2. Cook pasta in boiling salted water. Drain water, reserving a mug of pasta water. 

  3. Heat 1 tbsp of olive oil in a large non-stick pan. Add courgette and cook for 4 minutes stirring regularly.

  4. Finely slice mint leaves and stir into pan.

  5. Add pasta to pan of courgette with a splash of pasta water.

  6. Finely grate most of the parmesan and mix into pan along with all of lemon juice.

  7. Toss well and season with salt, pepper, and lemon zest.

  8. Dish up and grate over remaining parmesan and a drizzle of olive oil (optional).
